The
excellent quality of Monreale Saffron is
born of the respect for tradition and great attention to
detail. The purple flowers of the saffron must be gathered
only by hand, in the early morning as soon as they open.
They are then palced in small baskets to protect them without
crushing. Again by hand, the three stigmas are extracted
and left to dry naturally, on wooden boards, until they become
the red saffron trehads.
This procedure takes time and calls for skill and great care
only at the end of this process will the best saffron receive
the Monreale trademark.
